Japanese Influences But NOT A Japanese Restaurant
Tyler Fenton, owner of Reilly Craft Pizza & Drink, opened another restaurant in Tucson. Bata in the downtown Warehouse Arts District is Fenton’s third restaurant.
A historic 1930s warehouse at 35 E. Toole Avenue, converted to office and retail space in the 1980s.Decor of Bata keeps the original wood and metal bow truss ceilings. Exposed brick walls and polished the concrete floors create an modern industrial look.
The dining room is large. Two to six seat wood tables provide space for up to 90 diners.
There’s also a long cushioned bench seat set up against a shou sugi ban soffit. The charred wood on the soffit is remensicant of 18th century Japan.
The restaurant’s name also has Japanese origins. A shorthand term for Japanese style grilling called “robata”.
Japanese Cooking Techniques
Bata draws on Japanese and other international cooking techniques using open flame, but it is not a Japanese restaurant.
Open fire is a primary cooking technique for all items on the menu. Even a beef tartare has a fermented and flame-dried green onion powder as a garnish.
Grilled pork belly served with a sauce with ingredients burned in the fireplace.
Even desserts get charred in tasteful ways. Smoked chocolate mousse mille-fuille to the embered caramel on the koji ice cream.
A bar in the basement of the building will open in May. The concept comes from the Toughluck Club in the basement of Reillys downtown.
